Brownie Mix Cookies

Had too much of brownies so my kids are not interested to eat anymore traditional way brownie but still they love the taste of it so I make small bites size muffins too. But this time I wanted to make cookies and its really easy and quicker than regular brownie. Make this from ready made brownie mix box , add extra flour, nuts or chocolate chips, eggs and oil and bake it in a shape of cookies and you are done. You don't want to over bake it , just 9-10 minutes and take it out and leave it out on wire wreck for 5 minutes till it gets cool and then you can store it in airtight container.

Ingredients :

1 Box of Brownie (Just dry mix) I use Pillsbury
2 Eggs (for vegan version you can use flex seed egg)
1/4 cup Canola or Vegetable or Coconut Oil
1/4 cup Flour (I used whole wheat but white is also fine)
1/4 Cup Chocolate chips or nuts (optional)


Preheat oven to 375 F.

In a bowl, add brownie mix, eggs, canola oil and flour and mix it very well. If you are using any nuts or chips you can add it now.

Take ice cream scope and put the cookie dough on greased cookie tray or with parchment paper on it.

Leave at least 2 inches apart.
Bake for 9 minutes.

Take it out. Give a cookie sheet light tap on counter so that will give crinkle on top and it will take out any extra air.
Let it cool on baking sheet for 2-3 minutes and then transferred it to the cooling rack.

Proceed with rest and enjoy.

Savory Oats with Oranges and Olive Oil

I just can not have sweet in the morning with my tea, yes any savory dish is fine but after 10 I can have some sweet. So if I am eating something with or as my breakfast I would prefer savory. I know people going crazy about overnight oats with thousand of variations of it but for me that's dessert. I love it but not first thing in the morning. This is very famous cook's Giada's recipe and its perfect for any busy morning. You can add any other fruit but oranges go perfect. This is for single serve recipe. You can adjust with the quantities for more people or serving.

Ingredients : 

1/2 cup Old fashioned oats
Zest of 1/2 lemon or as per taste
Salt as per taste
1 tsp Fresh Thyme chopped
4 tsp. Extra virgin olive oil
1 orange cut in segments
2 tbsp roasted sun flower seeds

Method : 

In a medium pan, bring 2 cups of water and salt to boil . Add oats and cook  until creamy , about 5 - 6 minutes.

If you want thicker consistency, cook for 1 or 2 minutes more.

Stir in the lemon zest and thyme. Take it out in bowl. Drizzle with olive oil and top it with oranges and sun flower seeds.

Red Thai curry Quinoa Bowl

I love quick and easy recipes  but it has to be flavorful and spicy for me. So when I make my diner, I always look for that kick in my dishes. This is perfect example of quick delicious diner bowl and healthy too. You can use your favorite vegetables, instead of tofu, you can use precooked or raw chicken, fish, or any sea food in that matter and instead of quinoa, brown rice, cauliflower rice. Possibilities are endless for vegetarian and non vegetarian both.

Ingredients : 

1/2 Block firm tofu
1 cup cooked quinoa
1 each red, green capscicum
1 Carrot chopped in match sticks
1 onion chopped in Match sticks
3-4 tbsp Red curry paste or as per taste
Few thin slices of ginger
2 cloves of Garlic finely chopped
Salt as needed
Oil as needed

Method : 

Cook Quinoa as per package guide.
Add 1 tsp of oil and add 1 tbsp red curry paste and cook for few minutes. Add quinoa and cook for 2-3 minutes. Take it out and leave it aside.

Heat oil again in same pan, add vegetables and 1 tbsp or as per taste Red Curry paste and cook for 2-3 minutes. Don't overcook vegetables, it still has to remain crunchy. Take it out and leave it aside.

Heat 1 tbsp oil in same pan, add cut tofu in it. Make it little brown on all side. Add Curry paste and just toss in it so it gets the flavor.

In all these three batches if you think you need to add salt then only add salt. I like to sprinkle lemon / lime juice on top and less salt in food but you can add it as per your taste.

To serve : Take one bowl, add quinoa on one side, vegetables on other side and tofu on other side , sprinkle lime juice on top and enjoy hot , spicy one pot meal.

1 -2 -3 Everything Bagel Recipe

Facebook feed and internet is going crazy about this easy bagel recipe so I have to try it and now I am sharing it with you.  In first batch I followed the recipe and it was so good , my family finished 3 of it so I made another batch and in that one I added seasoning inside the bagel too and still it turn out really good.

I have used whole wheat flour but you can use all purpose flour too. I have used Trader Joe's  Everything bagel seasoning mix but you can just add plain white sesame seeds, black sesame seeds or just plain bagel. It will still taste amazing. I had it with Jalapenos cream cheese, it will taste good with plain old butter too. You can easily double or triple the recipe. Make the dough ahead , freeze it , get it on room temperature and bake it for the breakfast. Your family will thank you.

Ingredients : 

1 cup whole wheat flour
1 cup Greek yogurt (no plain yogurt only Greek non fat)
2 tsp. Baking powder
3/4 tsp Kosher salt (less if you are using regular salt)
4 tbsp Everything bagel seasoning or as needed.

Method :

Preheat the oven at 375 F

Take flour, baking powder and salt in Bowl. Ad yogurt and mix it, mix it all the flour is nicely mix with yogurt and it come out easily from your hand.

Divide dough in to 4 parts.

Roll it one part and make a hole in it.

Take a baking dish, put the parchment paper on it and make all 4 circles and sprinkle seasoning on it, on top and onside too.

Bake it on top rack of the oven for 25 minutes.

Cool for 10 minutes before cutting it and enjoy with butter , cream cheese, jalapenos cream cheese.

I had it with my morning tea.

How to Froze Fresh Herbs

We get nice fresh herbs but to save them its always a big problem. So now I just make ice cubes of those herbs either mix and match or separate and put it in olive oil and then use it. That way I dont have to rush to grocery store when I need it , just take a big one ice cube or half or two, as per the need and I am good with recipe. This saves money and time too. You spend one time and this last long.

There is no perfect measuring , just take your favorite herb(s) , wash it , chopped it and put it in ice cube tray and cover it with good olive oil . Leave it over night and next day take out from tray and put it in zipper bag, write on it what's in side so you don't have to guess what in the bag and use it as per the need.

I took

1 bunch of Fresh basil leaves
1 bunch of fresh organo leaves
1 bunch of parsley
few strings of rosemary


Wash and chopped all herbs nicely.

Put it in ice cube tray and cover with olive oil.

Keep it in freezer overnight and take out next day and put it in zip lock bag.

Matzo Icebox No Bake Cake for Boy Scout

I am not a Jewish but love Matzo and different other dishes from Jewish cuisine, Stay tune for one more Passover recipe in vegetarian format.

So If you don't know, Matzo is an unleavened flatbread that is a part of Jewish cuisine and they use it in Passover and other festivals. Somehow I just like it because it doesn't have any taste, what ever you put it on it takes its taste, we made, Matzo pizza, PB & J sandwiches, Nachos and what not.

So We had a project , where my son who is in boy scout , we have to make a cake to keep the boy scout theme in mind. I was very busy that week and didn't had time to take bake but had 3 packets of Matzo in the house so think to make something out of it and this idea came up  and then I googled it for boy scout theme and did the decoration.

So made the cake with matzo, chocolate and whipped cream layer, marshmallow for scout, pretzel as wood log and orange chocolate for fire and our cake is done. We didn't won the prize but this was our first cake bake event and the time we had it we nailed it so for the prize winning cake maybe next year.

Ingredients : 

8 Sheets of Matzo - I used this one

1 16 oz. whipping topping container
2 Blocks of cooking chocolate
4 Pretzels
1/4 cup orange chocolate melts
Marshmallows as needed


Melt the chocolate blocks in over proof bowl or by double boiler theme. I used it microwave.
Mix that with whipping cream and set aside.
Take the dish in which you are going to put the cake, add the glue (mix of chocolate and whipped cream), and put one matzo sheet. Apply more glue on whole square of matzo and keep on repeating till you done with Matzo.

Cover the all four sides of matzo with chocolate mix.

Once done, put it in fridge for 30 minutes.

After that, on one corner , put pretzel in a log shape, melt orange candies and spread it on parchment paper and chopped it in any shape and make make it a fire on pretzel.

Cover the rest of the space with marshmallow and your cake is ready.

Gulabjamun Mix Cake with Egg

Happy Easter to all who celebrate it.

So on this festival , why not make some easy and different cake for the loved ones. This cake is so easy, open up your Gits Gulab Jamun mix, add the  other necessary ingredients in it and bake it and you will have yummy cake ready. I put sliced almonds on top but you can do good icing and take it to the whole new level. 

I made it twice, once without egg and one with egg, without egg was very dry and was not happy with the outcome so next time made it with egg and it was soft and really good tasting . So I am going to share recipe with egg only. 

Ingredients : 

1 Packet Gulab Jamun Mix 1/4 cup  Whole wheat flour 1/4 cup  All purpose flour3/4 cup sugar 3/4 cup Milk 
2 tbsp.   canola oil 1 tbsp. Butter - 
1/2 tsp 
Baking powder 
 1/4 tsp 
Baking soda
1 Egg - whisked and ready  1 tsp 
Cardamom powder
 8 to 10  
Saffron strands
Almonds to sprinkle over top. 


 In a bowl, Sift whole wheat flour, all purpose flour, baking powder and baking soda in a bowl till you get all mix up.

Preheat the oven at 350 F / 180 C. 

 Now add the Gulabjamun mix to the sifted flour mixture and mix well and sift. 

Heat 3/4 cup milk, when it is heated up, add sugar powder, cardamom powder and saffron strands. Mix it till sugar dissolves completely. 

Now add oil, butter and mix evenly with wire whisk.

Add egg in liquid batter, make sure your milk is not to hot otherwise egg will scramble

Finally add flour mixture to this liquid mixture and fold gently. There should be no lumps.

 Pour the batter in a greased tin , decorate it with almonds and bake in a preheated oven at  350 F  / 180°c for 30 minutes approx.

You can make it without the egg also , just skip the egg and follow the rest of the recipe. But results are not that good.
